Backing up throws in the infield

I think you are right in not expecting the catcher to sprint down to first or third to backup the play. We try to teach the outfielders to backup plays to first and third. The second baseman and shortstop can back up plays to second depending on who should be covering the base. I think it is important to teach kids at that age that there is something each of them can do on every play.
